orange Tapioca

 
Ingredients
1 ½ cups milk
3 tbsp Gem Tapioca
1 large egg beaten
1 tbsp Gem Sugar
½ cup orange juice
Pinch of salt.
½ tsp vanilla extract
1 orange- peeled, seeded and diced.
 
     
Instructions
1. Place the milk, tapioca, egg, sugar and salt in a saucepan.
2. Cook over a medium heat, stirring constantly until the mixture comes to the boil.
3. Remove from heat. Add the orange juice stirring constantly. Return to the heat continuing to stir until the mixture boils again.
4. Remove from the heat and leave to cool for 10-15 minutes – Stir occasionally.
5. Add in the vanilla and diced orange.
6. Chill for approx 2 hours before serving.
