7 oz. (200g) Gem Demerara Sugar
4 oz. (115g) butter
1 egg
3 oz. (85g) Gem coconut
4 oz. (115g) flake oatmeal
4 oz. (115g) Gem plain flour
Pinch salt
ΒΌ teaspoon Gem bread soda
Instructions
1. Cream the butter and brown sugar and mix in
the egg.
2. Add the coconut, oatmeal and flour sifted with the salt and
bread soda. Mix well.
3. Divide into flour, form each piece into a roll and divide
into 9 pieces.
4. Roll each piece into a ball place on a greased baking tin and
flatten slightly with a fork.
5. Place in a pre-heated oven 375 F, 190 C, Gas mark 5, and bake
for 10-12 minutes.
6. Remove at once and cool on a wire tray.
