1. Heat glucose in a saucepan and add sugar
gradually stirring all the time with a wooden spoon. Allow the
sugar to melt after each addition.
2. Cook until it changes to a light caramel. When it reaches the
desired colour add the slightly warmed chocolate chips and stir
with a wooden spoon.
3. Pour onto a tray, place another tray on top and roll out
nougatine thinly between the two trays.
4. Cut out or shape using a chefs knife.
5. Leftover pieces can be re-warmed in the microwave or ground
up and used as a crunchy filling for desserts.
