Ingredients
9oz melted butter or margarine
9oz Gem Glucose
5 eggs
Peel of 2 lemons
9oz Gem flour
2 tsp. Baking soda
1 pinch salt

Icing:

½ cup of lemon juice
4 oz Gem glucose.
 
 
     
Instructions
1. Put the melted butter, glucose and eggs in a bowl together and mix well.
2. Add in the lemon peel.
3. Slowly add in the flour, baking soda and salt and mix well together until it forms a dough.
4. Put the dough in a greased cake tin and place in a pre-heated oven
5. Bake in the middle of the oven at 180°C for approx 60 minutes.
6. After the cake is cold, make holes with a knitting needle and soak with the icing.
