Chocolate Tapioca Pudding

 
Ingredients
3 tbsp. Gem Tapioca
1 cup Gem Sugar
1/8 tsp. salt
3 cups milk
1 egg
2oz/55g unsweetened chocolate
1 tsp. vanilla
 
     
Instructions
1. Put sugar, salt and tapioca in a saucepan. Stir in milk and beaten egg and leave to stand for 5 minutes.
2. Add chocolate.
3. Cook over a medium heat, stirring all the time for about 15 minutes or until the mixture comes to the boil and chocolate is well blended.
4. Remove from heat and add in vanilla.
5. Cool for 20 minutes, stir and chill.
