4 fillet of chicken
100g of Gem Coconut
2 tablespoons of chilli powder
2 tablespoons of coriander powder
1 inch piece of cinnamon
½ inch piece of ginger
4 to 5 curry leaves
8 to 10 peppercorns
Salt to taste
2 medium sized onions
3 to 4 tablespoons of coconut oil
Instructions
1. Clean and cut chicken into pieces.
2. Sauté Coconut and sprinkle chilli powder on it.
3. Roast cinnamon, cloves and peppercorns then grind to a
powder.
4. Slice onions and chop the ginger.
5. Mix together the prepared spices and onions, ginger, curry
leaves, coconut.
6. Add salt and water enough to cook meat dry, Keep on the heat
and bring to boil quickly.
7. Reduce heat and cook over a gentle heat till tender.
