2 cup Gem flour
2/3 cup Gem sugar
3/4 tsp baking soda
1/4 tsp salt
1/3 cup dark corn syrup
3 tbsp Gem vegetable oil
1 tsp vanilla
1 tsp coconut extract
2 egg whites
1/3 cup Gem flaked coconut
1 vegetable cooking spray
2 tbsp coconut, toasted
Instructions
1. Preheat oven to 350 oF, 180 oC Gas Mark 4.
Combine flour, sugar, soda and salt in a large bowl and blend
well.
2. Combine syrup, oil, vanilla, coconut extract, and egg whites;
blend well. Stir into dry ingredients, just until combined.
3. Add 1/3 cup coconut. Drop by level tablespoons onto sprayed
baking sheets.
4. Sprinkle with toasted coconut.
5. Bake 8 minutes; let cool on pan 1 minute before removing to
wire racks to cool completely.
