1 cup pearl barley
3 cups water
4 cups (1 lb) shredded Cheddar cheese
1 ½ cups sour cream
1 can (7oz) chopped green chillies
Instructions
1. Bring water to the boil in a medium saucepan.
Add barley and bring back to the boil.
2. Reduce heat, cover and cook for 45 minutes until barley is
tender and liquid is absorbed. Cool Slightly.
3. Mix barley, 3 cups of cheese, sour cream and chillies in a
large bowl.
4. Spray a 10”pie plate with non-stick cooking spray. Pour
mixture into pie plate and sprinkle with remaining cheese.
5. Bake in a pre-heated oven at 350ºF, 177ºC for 30-35 minutes.
Makes 6 servings.
