Gem Jam Sugar
Instructions
1. Wash fruit, and simmer fruit in water until
soft.
2. Allow the fruit to drip through a jelly bag or several layers
of muslin until the dripping has stopped.
3. Use 1kg Gem Jam Sugar to ¾ litres of juice.
4. Add the Jam sugar and heat gently, stirring continuously
until dissolved.
5. Heat mixture while stirring, increasing the heat until it
starts to boil. Start timing and boil for 1 minute.
