baked chicken with apples & barley
Ingredients
1 Tablespoon olive oil
½ cup chopped onion
½ cup chopped red pepper
½ cup chopped green pepper
1 clove garlic, finely chopped
1 medium tart green apple, chopped
1 – 2 tablespoons curry powder
1 cup pearl barley
2 ½ cups chicken broth
4 boneless, skinless chicken breasts
½ teaspoon garlic salt
3 tablespoons orange marmalade or apricot jam
Instructions
1. Heat oil in a saucepan and sauté onion,
pepper and garlic for 5 minutes stirring occasionally.
2. Add chopped apple and curry powder and sauté for an
additional 4 minutes.
3. Stir in barley and chicken broth and bring to the boil.
Reduce heat and simmer for a further 15 minutes.
4. Pour barley mixture into a large casserole dish. Arrange
chicken breasts over barley and season with garlic salt.
5. Cover and bake for 45 minutes at 375ºF, 190ºC.
6. Remove cover, brush chicken with marmalade and continue to
bake uncovered for a further 15 minutes.
7. Remove from oven and stand for 5 minutes before serving.
