MeringueCookies Topping:
3 egg whites
¼ teaspoon salt
½ cup Gem sugar
1 tablespoon ground cinnamon
¾ cup Gem ground almonds
Instructions
Meringue Cookies
1. Cream butter and sugar; add vanilla and almond extract; beat
in eggs. Add sifted dry ingredients; mix well.
2. Wrap in wax paper and refrigerate for several hours.
3. Cut into 1/8-inch slices and place on ungreased baking sheet.
Spread cookies with meringue topping; bake at 375° for 8 to 10
minutes.
4. Makes about 7-dozen meringue cookies.
