Sweet Potato and Lentil Curry

This one pot curry is the perfect winter warmer, packed full of fibre and protein. Easy to make and deliciously creamy it's sure to be a family favourite. Vegan, gluten free and dairy free.

1. Heat the coconut oil in a large pot over medium heat. Saute the onion until it’s turning slightly brown and then add the lentils, sweet potato, carrot, and spices. Mix to combine everything, add stock and bring to a boil.

2. Reduce the heat to a simmer and cook for 20 - 25 minutes, or until the sweet potato and lentils are soft.

3. Mix in the light coconut milk.

4. Season with salt and pepper, to taste, and serve warm with brown rice, quinoa or couscous.


  1. 1 medium sweet potato, cut into cubes
  2. 200g dried red or green lentils
  3. 1 large carrot, chopped
  4. 1 onion, diced
  5. 700ml of vegetable stock
  6. ½ tsp ground turmeric
  7. 1 tbsp curry powder
  8. 1 tsp ginger powder
  9. 1½ tbsp coconut oil
  10. 120ml of light coconut milk
  11. Salt
  12. Freshly ground black pepper
