Mango, Avocado and Chia Prawn Salad
1. In a bowl combine the mango, avocado, mint, chili and onion, and mix together.
2. Pour half of the lime juice over and mix again.
3. Pour onto a serving dish or salad bowl and place the prawns on top.
4. Pour the rest of the lime juice over the prawns.
5. Season with salt and pepper and sprinkle with the chia seeds.
(Note: Serve with a few extra wedges of lime and sprigs of mint.)
