Gem Fruit Cake

Fruit cake isn't just for Christmas, it can be enjoyed all year round. This recipe is super easy and makes a perfectly moist fruit cake.

Place the mixed dried fruit in a bowl and pour over the whiskey and cold tea. Allow to soak up the liquid overnight.

Preheat the oven to 170°C. Grease and line a 2lb loaf tin.

Combine the flour, baking powder, sugar and mixed spice in a mixing bowl. Make a well in the centre of dry ingredients and break in the egg. Using a wooden spoon, mix the egg into the dry ingredients. Add a little bit of the liquid from the soaked mixed fruit and mix it through.

Stir in the mixed fruit until everything is thoroughly combined.Spoon the wet dough into the lined loaf tin bake for 1 hour.

Remove from the oven and allow to cool slightly before removing from the loaf tin and place on a wire rack.


  1. 375g Gem Gourmet Mixed Dried Fruit
  2. 50ml Whiskey
  3. 250ml Cold Tea
  4. 2 tsp Gem Baking Powder
  5. 225g Plain Flour
  6. 125g Gem Soft Light Brown Sugar
  7. 1/2 tsp Mixed Spice
  8. 1 Large Egg
  9. Butter, for Greasing
