Chocolate Chip Cookies

Equipment

Ingredients

  • 150 g butter, room temperature

  • 80 g Gem soft brown sugar

  • 80 g Gem caster sugar

  • 1 egg

  • 2 tsp vanilla extract

  • 225 g Gem self-raising flour

  • ½ tsp Gem bread soda

  • ¼ tsp salt

  • 70 g milk Gem chocolate chips

Instructions

Cream together the butter, brown sugar and caster sugar until combined and pale in colour.

Add the egg and vanilla extract and combine.

Sift in flour, bread soda, salt and combine into mixture.

Add chocolate chips and mix.

Use a sheet of parchment paper to spread mixture into a rough line and roll up into a tube shape about two inches thick, twist ends of parchment paper like a Christmas cracker and refrigerate for 2-3 hours for easy slicing later.

Remove from fridge and cut into ½ inch discs and place on a baking tray with lots of space around them as they will spread in oven, usually bakes in two batches.

Bake in preheated oven at 200C/180C fan on a high shelf for 8-10 minutes.

Remember to rotate your tray halfway through baking as this will allow all the cookies to be baked at the same time.

The cookies will be soft initially but will set in a few minutes.

Cool on a wire rack. If you bring the tray outside to the cold for a minute, they will crisp up lovely.

Notes

Add chopped nuts or white chocolate chips for a tasty variation.
