Chewy Oatmeal & Coconut Biscuits

Method

Preheat the oven to 190°C/375°F.

1. Cream the butter and sugars together until smooth.

2. Beat in the eggs and stir in milk and vanilla essence.

3. Combine flour, bread soda and salt. Stir into sugar mixture and mix well.

4. Stir in oats and coconut mixing well.

5. Drop by rounded tablespoons onto an ungreased cookie sheet.

6. Bake for 10/12 minutes in preheated oven for a chewy cookie.

7. Cool on a wire rack.

  1. 100g of Gem Caster Sugar
  2. 275g of Gem Demerara Sugar
  3. 225g of Butter
  4. 75g of Gem Coconut
  5. 245g of Flaked Oatmeal
  6. 220g of Gem Plain Flour
  7. 30ml of Milk
  8. 1/4 teaspoon of Gem Bread Soda
  9. 2 Medium Eggs
  10. 2 drops of Vanilla Essence
  11. A pinch of salt
