Blackberry Jelly

Blackberry jam can be used in a variety of ways. It can be added to porridge, served with warm scones or used as a filler for cakes. This simple technique for making jam can be applied to a variety of fruits for different flavours.

1. Wash fruit, and simmer fruit in water until soft.

2. Allow the fruit to drip through a jelly bag or several layers of muslin until the dripping has stopped.

3. Use 1kg Gem Jam Sugar to ¾ litres of juice.

4. Add the Jam sugar and heat gently, stirring continuously until dissolved.

5. Heat mixture while stirring, increasing the heat until it starts to boil. Start timing and boil for 1 minute.

  2. 150ml of water
  3. Gem Jam Sugar
