Banana Prune Muffins

Banana Prune Muffins

These delicious muffins are a perfect lunchbox filler for both adults and children. Adding prunes to recipes is a great way to increase fibre intake.

Method

Heat oven to 190°C/375°F.

Grease or line 12 (2 ½-inch) muffin cups with paper baking cups.

Combine butter and sugar, beat until well blended.

Add egg and blend well.

Stir in banana and vanilla.

Combine flour, baking powder, baking soda, salt and cinnamon.

Add to butter mixture; stir just until dry ingredients are moistened.

Fold in prunes. Spoon batter into prepared muffin cups.

Bake in upper third of oven for 20 to 25 minutes or until toothpick inserted in center comes out clean.

  1. 3/4 cup chopped Sunsweet Pitted Prunes
  2. 1/4 teaspoon cinnamon
  3. 1/4 teaspoon salt
  4. 1/2 teaspoon Gem bread soda
  5. 1 teaspoon Gem baking powder
  6. 1 1/2 cups all-purpose flour
  7. 1 teaspoon vanilla essence
  8. 2 medium mashed ripe bananas
  9. 1 egg
  10. 1/2 cup Gem caster sugar
  11. 1/2 cup butter or margarine, softened
