Banana Bread with Choc Chip & Kefir

Preheat the oven to 175C. Butter and flour a loaf tin or line it with baking paper.

Mix the flour, baking powder, bicarbonate of soda and salt in a medium bowl.

In a separate large bowl, beat the sugar and eggs together until pale and fluffy.

Carefully stir in the mashed bananas, kefir, choc chips followed by the flour mixure.

Pour it into the loaf tin and bake it for 45-55 mins or until a wooden stick inserted into the center comes out clean.

Leave to cool in the tin then turn out and dust the top with some Gem icing sugar. Enjoy!

Notes

If you fancy, you can replace the 100g choc chips with 100g of Gem walnuts. Just chop them into small pieces and add them to the mixture instead of the choc chips.
