Almond Meringue Cookies
1. Cream butter and sugar; add vanilla and almond extract; beat in eggs. Add sifted dry ingredients; mix well.
2. Wrap in wax paper and refrigerate for several hours.
3. Cut into 1/8-inch slices and place on ungreased baking sheet. Spread cookies with meringue topping; bake at 375° for 8 to 10 minutes.
Makes about 7-dozen meringue cookies.
Topping for Meringue Cookies:
1. Beat egg whites until foamy; add ¼ teaspoon salt, ½ cup sugar, cinnamon, and ground almonds. Mix.
