Almond Meringue Cookies

These meringue cookies are perfect served with tea and coffee at a dinner party as they are light and tasty.

Method

Meringue Cookies

1. Cream butter and sugar; add vanilla and almond extract; beat in eggs. Add sifted dry ingredients; mix well.

2. Wrap in wax paper and refrigerate for several hours.

3. Cut into 1/8-inch slices and place on ungreased baking sheet. Spread cookies with meringue topping; bake at 375° for 8 to 10 minutes.

Makes about 7-dozen meringue cookies.

Topping for Meringue Cookies:

1. Beat egg whites until foamy; add ¼ teaspoon salt, ½ cup sugar, cinnamon, and ground almonds. Mix.

  1. 1 1/4 cups of butter
  2. 2 cups of Gem granulated sugar
  3. 1/2 teaspoon of vanilla extract
  4. 1/4 teaspoon of almond extract
  5. 2 eggs
  6. 4 cups of Gem all-purpose flour
  7. 1/3 teaspoon of salt
  8. 3 egg whites
  9. 1/4 teaspoon of salt
  10. 1/2 cup of Gem sugar
  11. 1 tablespoon of ground cinnamon
  12. 3/4 cup of Gem ground almonds
